The children can be hard to please when it comes to vegetable innovations, but this veggie quesadilla recipe will ensure success in making them become “big and strong”. The best part is that they can join in on the prepping process by building their own quesadilla.
Preparation time: 25 minutes
Ingredients:
• 8-10 Tortillas
• Cooked flavoured chicken strips
• Prepared mushroom sauce
• Grated cheddar cheese
• Fresh spinach
• Cooking spray
• Salt and pepper to taste
• Sour cream for dipping
• Canola oil for cooking
Now for the fun part:
1. Add the canola oil in a pan and swirl around to cover the entire base of the pan. Sauté the spinach for 2 minutes and remove from heat.
2. Stir in a handful of cheese with the spinach and add mushroom sauce. Mix together until the spinach is creamy, but not runny. Cut the chicken into smaller strips.
3. Call the children over to start assembling their meals.
4. Spread the creamed spinach on 4-5 tortillas.
5. Next, lay the chicken strips over the spinach, add salt and pepper to taste, then sprinkle the cheese. Top with another tortilla.
6. Spray a clean pan with cooking spray and cook the assembled tortilla uncovered for 4-6 minutes over medium heat and turn over after 2 minutes. Repeat with the remaining tortillas.
To serve, cut each tortilla into 6 wedges. Serve with sour cream. Switch it up by incorporating different veggies into the recipe.
